We first came across this coffee during one of our sampling session from Granja La Esperanza. Out of 20 coffee, this particular coffee stood out , with distinct notes of Mandarin/oranges with high clarity and sweetness.
Due to its rarity, we had to reserve before the harvest starts. The process 'XO' is a secret process invented and used by La Esperanza. Unlike typical anaerobic fermentation where the winey aspect could be very dominant, the XO process managed to bring out and maintain delicate tasting notes like floral and mandarin oranges, thanks to its controlled fermentation and drying before the coffee were sent to solar drying for several days.
